For example, mirroring a disk drive means having two drives and writing the same data to both of them, so if one of them breaks the data are still available on the other one.
The term is also used for servers with the same meaning: Make sure the data are available from more than one place.
Mirroring is slightly different from backups: A backup is stored offline, and it takes time and effort to restore a system from backup. With a mirror both systems are running all the time, so the service can continue unaffected when one of the systems go down.
