Victory wouldn't taste as sweet if the High King bet his subjects. To symbolise how strong their reign was, Peter had Edmund, the younger of the two, challenge Trumpkin instead.

Peter had Edmund challenge Trumpkin to a swordfight because Peter knew that as a former high king, he was not allowed to engage in a duel that could potentially harm his reputation or authority. By having Edmund fight in his place, Peter maintained his status while still showing strength and leadership.
