when Rosalie was hunting she came across him being mauled by a bear. Because he looked so much like an adorable little boy she knew, she was selfish enough to take him back to Carlisle to change him for her. ya... he looked like her friend Vera's little baby boy, Henry. Rosalie and Vera were friends before Rosalie became a vampire. It explains this in Eclipse.

∙ 15y agoEmmett Cullen was changed after Rosalie found him attacked by a bear. She carried him back to Carlise because she was afraid she wouldn't be strong enough to stop and she wanted him changed because he smelled better to her that any other human. She loved him.

∙ 14y agoAfter Edward, Carlisle changed (in this order) Esme, Rosalie and Emmett. Jasper and Alice found the Cullens later and were also 'adopted'. And (spoiler if you haven't read the last book) Bella and Renessmee were 'adopted' once Edward and Bella got married and Bella had Renesmee.
Edward Cullen was adopted by Carlisle and Esme Cullen. They found him dying of Spanish influenza in 1918 and changed him into a vampire to save his life.
