You need 3-phase power if the equipment you have specifies it. For instance, if you have a pump with a 3-phase motor, you will need 3-phase power!

A 3 phase converter is an ac/dc converter. It can be used on many appliances. It could be used with batteries so if the power fails you still have a back source.
