There is only one saint named Christopher but there are several blesseds by that name.
There are several legends about him including the one in which he was crossing a river when a child asked to be carried across. When Christopher put the child on his shoulders he found the child was unbelievably heavy. The child, according to the legend, was Christ carrying the weight of the whole world. This was what made Christopher patron saint of travelers and is invoked against storms, plagues, etc..
Christopher is not the patron saint of hockey. There are no patrons of individual sports. St. Sebastian is the patron saint of athletics and athletes in general. (as per Patron Saint Index)

Saint Christopher was a large man from Palestine who helped travelers cross a raging river like a human ferry. One day a small child asked to be carried across the river. The child grew heavier as Saint Christopher crossed the river. After crossing the river Saint Christopher asked the child"Who are you, that you placed me in such peril." The child replied "You not only carried the world, but him who made it. I am Jesus Christ the King".
Saint Christopher's feast day is July 25th. However, his feast is no longer on the Calendar of Saints in the Catholic Church so it is only celebrated in those parishes or dioceses that have Christopher as a patron,

St. Christopher is a somewhat legendary saint. He may not have existed. There is little information known about him so we do not even know where he lived. The only thing we do know is that he was reportdly martyred for his faith in the early years of the Christianity.
Saint Cuthbert is the only saint born in the British Isles.
He was the only Roman emperor who became a saint.

Christopher is a legendary saint who may, or may not have, existed. We know little about him and most of that is legend. St. Christopher was declared a saint before the official canonization process was instituted in the 12th century. He would have been declared a saint to the bishop by those who knew him best and were familiar with his life and merits. The local bishop would them make the decision. Today only the pope can declare saints after years of study by the Sacred Congregation for the Causes of Saints in the Vatican. The church does not create saints. Only God can do that. The Church "screens" candidates for sainthood to determine if they had a life worthy of emmulation. In other words, do they make good role models. Also, the Church has to be assured that the person is actually in Heaven. That is the reason that today a number of miracles must be verified before a person can be declared a saint.
