There is no actual real significant difference, besides the color. A black ceiling fan works the exact same as a white ceiling fan. Of course, the brand of the fan might make a difference, though the color of the fan will not.
A black ceiling fan is likely to show the same amount of dust, unless the dust is dark in color. For instance, it could be mold spores or soot particles from candles. In this case a black fan will be less likely to show the particles.

If you have two wires in the ceiling, they should be black and white. Old wire it may be hard to tell. For two wires for just a light, it doesn't matter. You should wire black to black and white to white but nothing will happen if you reverse them. The light fixture should have black and white also and probably a green or bare wire for the ground. You could have 4 or 6 wires in two groups of 2 or 3. Power comes into the box, one leg goes to a wall switch and comes back to the light. If you do not know which is the power coming in you can test each group with a tester. A cheap tester is available for around $4. If there are two groups of wires, try the tester on each group. The black and white of each set. Black is hot, white is neutral. When you find which line is the power coming into the ceiling box, the white one goes to the white one in the fixture. The two black ones are twisted together and held with a wire nut, the second white wire which should now be considered black goes to the black wire in the fixture. Power comes into the ceiling box on the black wire, goes to the switch on the second black wire and come back to the ceiling box on the white wire. That completes the circuit.
