A bound salad is a salad made of hearty ingredients (meat, potatoes, etc.) fortified with a thick sauce (almost always mayonnaise). This is the kind of salad you'd make into a sandwich or eat with a main course; think tuna or potato salad.

A dressed salad is a "normal" green salad served with some kind of salad dressing. These dressings (Ranch, Thousand Island, vinaigrettes) are usually made with mayonnaise or oil, but are used in a much lower quantity than in a bound salad.
