A sport horse is a type of horse which is bred for Olympic equestrian events. It's not any particular breed of horse.
There is no mention of the breed in the books but judging from the movie (and from Massie's wealth) it might be a Thoroughbred or warmblood sport horse of some kind, and the colour of Brownie in the book is described as 'white' but in the movie the horse is fleabitten grey.
It really depends on the breed of the mare and stallion. Normally, the foal would just be a cross breed, but, for example, if you bred a quarter horse and an Arabian, the foal would be classed as a Quarab.
