Alex Trebek does not run Jeopardy. He is only the Host. On a TV show the are a few people at least more important to the show than the Host. They are the ones who actually come up an get the awards when a show is honored. To get back to your question Alex Trebek started hosting Jeopardy in 1984 and it is in the 27th season.
Art Fleming was the host of the original Jeopardy gameshow that ran from 1964 - 1975 during the day. Due to flagging ratings because of its poor daytime time slot, the show was taken off the air after the 1975 season. In 1978, it was resurrected as The All-New Jeopardy again with Art Fleming as its host and again airing during the day. It only lasted one season. The first Jeopardy with Alex Trebek as host was aired on September 10, 1984 in its present evening time slot.

The USA show has had only Pat Sajak as host for the syndicated nighttime version. Both Pat Sajak and Chuck Woolery hosted the earlier Daytime USA show. Alex Trebek did guest host the nighttime show on 1 April 1997 when he and Pat Sajak traded places for Hosts of the Wheel of Fortune and Jeopardy shows.

Jeopardy had a 25th anniversary on both March 30 1989 for the original show with Art Fleming and September 10 2009 for the Alex Trebek syndicated show. Saturday, February 20 2010 could only be a repeat of an earlier episode as Jeopardy is in there 26th season of the new syndicated show.

I know of no way to watch the original episodes of Jeopardy and don't believe it is possible as according to Wikipedia only a small number of the 2,753 episodes from the original NBC Daytime version survive, mostly as black-and-white kinescopes of the original color videotapes.
