Most likely your crab overheated. A crab needs tepid (not hot, not cold) water to bath in and drink from. It does not take long to heat a crab to death.

Foods should not stay in room temperature for long. Bacteria can grow on foods left in this danger zone in an hours time. Keep hot foods hot and cold foods cold.
Yes they can. If it gets to hot the crab can get dried out. Usually water is the mostly makes the crab live. It can evaporate when it gets too hot and the crab will die. After all, you don't see hermit crabs in the desert.
