Hydrophilic molecules are attracted to water. Hydrophobic molecules are not attracted to water, but they are attracted to each other. Phospholipid molecules are unusual because they are partly hydrophilic and partly hydrophobic. The phosphate head is hydrophilic and the two hydrocarbon tails are hydrophobic. In water, phospholipids form double layer with the hydrophilic heads in contact with water on both sides and the hydrophilic tails away from water in the centre. This arrangement is found in biological membranes. The attraction between the hydrophobic tails in the centre and between the hydrophilic heads and the surrounding water makes membranes veery stable.

The cell membrane is mostly composed of phospholipid molecules. Each of these has a polar head and a non-polar tail part. The polar bits are attracted to water (hydrophilic) , and the non-polar parts repel water (hydrophobic). In the membrane, they form a double layer - like a sandwich - the polar heads stick out, and the tails form the middle, like the filling inside the sandwich. This way, the inner and the outer surfaces of the membrane are hydrophilic, being on "good terms" with the water in the outer environment and the water in the cytoplasm. At the same time, the membrane separates these two aqueous environments from each other - exactly because there is a non-polar middle layer, that does not allow polar substances to cross to the other side.

The primary structure of a cell membrane is a double layer of phospholipid molecules which have heads that are hydrophilic (water-loving). These face outwards and tails are hydrophobic (water-fearing) and these face inwards.Because of this polarity the molecules arrange themselves in bilayers in water.

Phospholipids are formed of two types of parts, a hydrophilic part that is a attracted to and likes water, and a hydrophobic part that is repelled by water. The Phospholipid forms the bilayer to keep the hydrophobic part from coming in contact with the water and puts the hydrophobic part on the inside of the two layers of the hydrophilic part.
All the molecules in the bilayer are in a low energy state, so are stable on a molecular level. The layer is kept stable because the phosphate head is attracted to the water while the lipid is repelled. This lines up the molecules. They have no reason to move. In a bilayer, the molecules are back to back, so lipids are trapped in a hydrophobic section.
