I have eaten bear meat. It was from a big black bear, not a grizzly bear. Grizzly bears are protected--it would be illegal to eat one. Lewis & Clark shot one grizzly bear on their trek across the United States, then prohibited any more, because it took up so much shot and powder to bring the critter down. Bear meat does not taste like chicken. What I had was actually a bit rancid, unfortunately. Because bears are carnivores you can get trichinosis from under cooked bear meat.
