Popcorn will keep nicely on the shelf for at least a year. Freezing it will dehydrate it which will not let it pop. Popcorn's cooking properties involve the internal moisture of the kernal, so freezing it would be bad.

Popcorn as such isn't anything special. Neither particularly good or bad unless you eat huge amounts. What's usually the trouble is that we usually have them with seasoning - butter and salt. Eating too much of those is bad.

I've been eating from the same pop corn bag for about 2 weeks now. Started to taste like movie theatre popcorn. I think it's still good.
I'm not sure if it is actually good or bad for Crohn's, I think it depends on the person the stage of disease they are in. However, I can tell you that I can't eat alot of popcorn if any at all with my Crohn's. It gives me a terrible flare up. Hope this helps a little !
