Yes, you can apply shellac (French polish) to all sorts of things, paper, metal, hardwoods and softwoods. Shellac is used as a glazing agent in some sweets too. The only reason not to French polish softwood is that it takes some time to apply the finish and some would say it's not worth the effort on softwoods.
