Honey that you buy in supermarkets is blended. It is a mixture of honeys from a lot of different sources and has been pasteurized and forced through fine filters before packing.
Honey produced and packed by amateur beekeepers will just have been filtered to remove particles of wax from the comb. It will not have been heat treated in any so will still have the volatile essential oils from the flowers, and the flavour will depend on what flowers the bees have been foraging from. In order to get the bees to forage from only one type of flower, you would have to put the hives in the middle of very large fields of all one crop. This can be done, and sometimes is. More usually, however the bees visit a variety of flowers, so the honey is a mixture of these flavours.
