You should probably wait another week or so. You have gaps in your gums where your wisdom teeth were, and those gaps are highly susceptible to infection at first. If you were to get an infection there, it would be very painful and could cause further problems.
Getting your tongue piercing exposes your mouth to new issues. The actual piercing could infect it - it can get pretty germ-y in your mouth.
Also, you'll be in pain from the piercing, at least for the first few days - are you up to that so soon?

You should wait until the wisdom teeth come in, and then get them pulled, because the metal bands may not fit around the wisdom teeth, and most people have more comfort when their wisdom teeth are pulled. I have braces and my wisdom teeth came through and my otho hasn't done anything to them.
Sometimes when lower wisdom teeth are removed, the nerve that is used by the tongue is bumped or bruised. It is most often temporary, but it sometimes can take several months to heal. Let the dentist who removed the teeth know about this complication.
