APs of any sort look good for college applications. However, while the admissions office will look highly on the fact that you have taken so many classes in your desired major (both englishes), the reality is you will most likely need to retake the courses in college since they are the basis of your major. This is the same for any major (if you major in chemistry and you get a 5 on the test, you will still need to take the college course). You will be able to be exemped from calculus (if you do well) and maybe the histories and psychology.

AP English 3 has an emphasis on language. It also emphasizes American literature in correspondance to us history. At least it does in my school. Ap 4 has an emphasis in literature. Both are great classes. You should take them both!
Never skip taking the class, you learn valuable lessons that can help making taking that particular test easier and other AP exams easier. As a sophomore you have options so don't over do it with the AP classes and try to enjoy yourself colleges won't look down on taking one less AP. Also they care more about the AP class grade than they do the AP test.
