HIV will normally take many years to progress to the point where doctors will advise that you start treatment - and during most of that time it is highly likely that all the normal blood tests (FBC / CBC, U&E, liver & kidney function, lipids etc.) will return results within the expected reference ranges for a healthy person. Assuming that your HIV is diagnosed in good time, treatment normally starts early enough to preserve good health - not when you are already ill - so it is not beyond belief that your blood test results could be normal right up to (and indeed long after) the point at which you start treatment.
