Contact Spartan Foods 1-800-451-8500. Give them the product name, the bar code, and the "code" stamp. Older cans have a "code" stamped on the top and/or bottom. (Newer cans do have a date marked.)
I use my button mushrooms as long as they are whitish and the cap is still tight to the stem. They are starting to go when the cap loosens from the stem but they are icky when they get bruises, freckles and a brownish tinge to them.
I only use them when they are closed ( white mushrooms ). As soon as the are open - I have a look if they are hard or if I cut them in half if the mushroom itself still has the white colour. If not... it´s goes into the the bin.
If they are dried and have been stored properly, there should not be any concern about food safety. The quality could be affected and they might not taste so good as you would hope. The date on the package would be the time frame that the processor would guarantee their product - if it has not been abused.
A slimy film is the telltale sign of a spoiled mushroom. If you catch it early and cook 'em up right away you can get another day out of your mushrooms, but once the slime starts, it's a slippery slope toward the darkening in color and mushy texture that indicate mold of the inedible variety.
Remember: Whole mushrooms keep longer than pre-sliced and stay fresh longest when refrigerated in their original packaging.
A person can tell if mushroom have spoiled when they start to develop a film or sticky coating. Mushrooms will last up to 10 days in the fridge.
There is no ripeness to mushrooms..... they are ready to go once their in the stores
