Yes, melon can be a name for an Ice Cream flavor. Even though it sounds very generic in the United States, there are several countries that use the word melon as an all inclusive word for, well, melons. As an example, in Japan, where any type of melon is very expensive (some can be well over $40 US), the word melon is used for flavoring that resembles a mixture of what Americans would call 'melon like' taste.

If the question was more of can melons be made into ice cream, yes they can. Even if the melon seems to acidic, they can be made into ice cream with the use of a buffering agent so that the cream does curdle. I have actually had Lemon Ice Cream!
