I own a 2001 Mustang V6 Convertible Automatic. It has some additions on it: Cold Air, Full Length Dual Exhaust... I do a 0-60 in the mid to high 7s. With the I-Frames out and a manual, you should do low 7s providing you know how to drive a stick properly. Car and Driver found 7.1 I think for a 0-60 on a 2000 V6 Manual. You can swap a 1997 Mustang V6 into a 1968 Mustang. You will need to make several modifications to the 1968 Mustang.
If i were you i would forget about it. v6 Mustang trannies aren't built to handle the torque and horsepower a v8 puts out. You would probably risk doing serious damage to your car if you did that swap. Check eBay for a tranny for your v8. I own a 2003 Pony Package V6 Mustang and i plan on doing an entire overhaul on my car and will be changing everything to do with the stock powertrain.
