Sauerkraut was used by Captain James Cook in the 1700s as an anti-scorbutic agent. This was one of his great contributions to marine voyaging. And those voyages lasted well beyond a year.
I seem to remember that on a voyage of more than two years, and with a total crew of more than a hundred, he only lost one man! (And that was due to exposure consequent upon drunkeness. )
That would be considered a pretty good record in 2012 even!
