That date is a "Freshest By Date". Soda does not expire. You can drink a soda that is several years old-- I have. Not good, but wont hurt you. Most distributors will buy "out dated" soda back from the vendor/store, just so they will have the freshest product on the shelf. Milk, eggs, cheese, those have an expiration date. And stores sell these ALL the time past the expiration date, at a deeply discounted price.
Yes you can. Soda has not always had an expiration date on the bottle, can, etc. it may taste a little funny if it is too old but other than that it should be fine.

However, many of those artificial sweeteners have adverse effects, and are often thought to be carcinogens (cancer-causing agents)
