Subsistence farming can take many forms. Most of the growing will be done with the seasons. In temperate regions, you will find subsistence farmers growing crops from April to October. A wide variety of crops are needed for the subsistence farmer, some of them can be harvested in May/June, but some crops take all summer to grow to harvest. With proper preservation techniques, it may be possible to grow a large harvest for some crops one year, and then skip a year of production. Potatoes and onions will store well for a long time. The key is to produce a number of different crops that will provide adequate nutrition year-round.
