Engineers have state in various places that the 5.7l hemi is a hybrid of the two. both Poly and Hemispherical.
However i own a 5.7 and speculate that its more of a Hemispherical design.
the 426 hemi is the best and only true hemi, these new so called hemi engines are really not true hemi's.
The original hemi engine from the 50's and 60's were called "hemi's" because the combustion chamber was in the shape of a half circle. Current Hemi engines are not true hemi because to combustion chamber shape is modified to meet emissions, but it still has the opposing valve layout.

The answer is No you are not more then your genes.
It is more fuel efficient than it used to be but it still is more of a high performance than econimcal engine. If it is in a newer truck AND you keep your foot out of it, you can expect to get aroung 18 to 20 mpg. If you just can't help yourself and drop the hammer on it, your mpg will go down in exact proportion to the amount of fun you produce. Same holds true in a Challenger.
