Borzoi are thought to be derived from middle eastern sighthounds (saluki-like dogs) that were brought over to Russia. These dogs were short coated and had very little fat and often froze in the freezing temperatures in Russia, so, they crossed these dogs with thick coated herding dogs to create the borzoi.
