Yes, your console can "brick" - which practically means it is rendered useless due to an software update error. This error usually happens because you are updating from a jailbreak firmware to an official firmware.

You also run the risk of being banned from Playstation Network. In this case, the entire console is banned and you can never play online with it again.

Jailbreaking can be very useful if you want to get more out of your PS3. But you just need to be cautious when you do it. I don't even know if there is a jailbreak for 3.60.
