Chaos Emeralds are not real. Neither is Sonic.
You don't have to collect all the emeralds, but you can to get the Best ending and the REAL final boss for Sonic.
You need all the Sol emeralds too. Defeat the final boss, then if you have collected all emeralds, the REAL final boss opens up and you play as Super Sonic and Burning Blaze.
Now in Sonic Colors for the Wii, there is no Super Sonic. On the Ds version, you can collect all 7 chaos emeralds and fight the real final boss. I don't think you can use Super Sonic in a level.

In the Sonic the Hedgehog video game series, Chaos Emeralds are magical jems that turn thoughts into power (thus they have unlimited energy), Chaos Control is the ability to use the Emeralds' power to warp time and space - there is no such thing as Chaos Emeralds or anything like them in real life so there is also no such thing as Chaos Control (since Chaos Control requires these Emeralds by definition). If you're talking how do the fictional characters from games do this - it's not known if this is an ability they are born with or if it is something that is learned.

In the earlier games and the sonic Rush series you collected them via a minigame found somewhere in the stage (look for the really big ring/spring or the red ball) once you complete the minigame you get the Emerald.In sonic adventure and such, you get them after a stage or at certain plot points. then you can usually change into super sonic or one of his many different forms.For sonic, they are always the chaos emeralds. you find them as you pregress through a certain game. In the comics, you needed 100 magic rings and 7 chaos emeralds, (which in the comics there were tons of) but in the real sonic world, there are only 7, and you dont need 100 rings to go super.You can only turn into Super Sonic in the extra zone if you are playing sonic advance.

Demon Sonic is merely a fan created power fans gave him. Not real. Don't be fooled by Dark Sonic (which showed up once in Sonic X in the history of all that is Sonic), or Dark Super Sonic either (not that it takes chaos emeralds to become Dark Sonic and was never created by SEGA) also a fan thing. This has never showed up in anything Sonic in his history except for one breif moment in a episode of Sonic X.
