The general term for destruction of a structure is demolition. A specialized form of explosive demolition is known as a building "Implosion". Developed by the father of a friend of mine, in an implosion, the building is folded into itself. It requires removal of structural supports, and explosives to make the final cuts. Very impressive to watch, and it takes a lot of work and engineering to do it right. The link below will take you to a video of one of the thousands of implosions their company has conducted.
