When we look at Saturn from Earth we see mostly clouds of ammonia. We cannot see deep enough into them to see any liquid or solid parts so no, we have not seen any eruptions on Saturn.
However we have seen some on Saturn's moons because they don't have such huge dense clouds themselves.
