So, first of all, we have incontrovertible evidence that there were once other species of humans. And without writing a lengthy essay, there are now several known fossils of transitional species, showing that species really did evolve.
On the other hand, while some parts of the Bible are reasonably accurate historically, much of the Bible relies solely on faith. That part that bears most direct comparison to evolution is the story of creation. In fact there are really two stories of creation in the Book of Genesis - The Priestly account in Genesis 1:1-2:4a and the very different Yahwist account in Genesis 2:4b-2:25. As for the Priestly account, how many would really say that grass, herbs and trees grew before there was even a sun in the sky.
