White reflects light, including all colors, while black absorbs light, including all colors. This means that white does not reflect black, but rather all colors, and black absorbs light, even white light.
White is not a colour ... it is the absence of all color. White is a mixture of all coloured light, all colours are a reflection of light. The first thing to disappear when the light goes down is colour. In total darkness there is no light to reflect.
The colour 'white' when all of the light is bounced of the surface on which the colour is mounted. If the colour is darkened then there will be some light being absorbed into the surface. This means that the colour is no longer 'white' more of a grey or possibly black. :)
perfectly normal. Mine are doing the same thing. but one nipple stays dark while the other keeps changing from dark to light.

The horizon
There is no such thing as a horse with a blue mane and white skin. However a grey horse (has grey or black skin) can have a light grey mane which could appear blue in the right light and a white looking coat.
