Yes. The liver should be bright red and healthy looking. Wash in cold salted water then rinsed with cold running water. Remove clots and membranes attached if any. Roast with turkey about 1 hour before removing turkey from the oven, the liver should be cooked but not overdone. If eating organ meats is not your thing, at least add the liver and other organ meats to the stock pot for a wonderful base for your gravy. Do not discard after boiling as the cooked meats are great treats for your dog or cat while you enjoy your turkey dinner. Other ideas: The giblets (neck, heart, liver and gizzard) should be boiled up with onion and spices to provide stock to mix into the dressing. The liver can be diced (1/4 " cubes) and added to the dressing. The dog loves the gizzard and heart.
