During photosynthesis water and carbon dioxide (in the presence of chorophyll and sunlight) interact to produce carbohydrates and oxygen, so water is definitely used in thye chemical reaction we call photosynthesis. Water is also used in another sense, as the medium in which the chemicals are dissolved for this reaction to occur.

Respiration, on the other hand, releases water and carbon dioxide into the air.

No, water is not a product of photosynthesis. Water is a REACTANT of photosynthesis (at least in the simplified version): : 6 CO2(g) + 6 H2O(l) + photons → C6H12O6(aq) + 6 O2(g) Water is used in photosynthesis. It is broken down and the released oxygen (O2) comes from the water.
