The spring goes towards the engine block.
If you look at the bottom of the thermostat you will see the spring wrapped around the valve that goes up & down to open & close the thermostat. The spring is made from heat sensitive metal and is what opens and closes the thermostat as it expands & contracts. If the thermostat is installed upside down, the spring will not be in the coolant and will not open until it gets hotter than the specified temp of the thermostat and could cause overheating problems and coolant flow issues.
Did you install the thermostat right side up? Or upside down?
either you are not using correct thermostats,or putting them in upside down,or thermostat is NOT the problem

You may have the thermostat in upside down, typically you want the pointed side facing UP.
The thermostat is located where the upper hose from the radiator attaches to the engine block. The two bolts or screws holding it, are through the flange of the thermostat. Since it also fits upside down, observe how the thermostat is located in the block opening before replacing it with the new one.
