Metamorphism occurs when the temperature and or pressure environment in which a rock exists changes. The mineral assemblage present in a rock is stable for any given temperature/pressure environment and when that environment changes a new, stable mineral assemblage forms and as it does so it can align with the the stress axes to impart a metamorphic fabric.

And Pressure is another variable with metamorphic effect. Diamond would be the most spectacular example, but in general increasing the pressure will encourage the formation of crystal forms with smaller volume.
And in the softened state produced at temperature, the physical deformation of a crystal lattice is enabled. Slate would be a common example of this response to shear.
