In the 1865 there was a labor shortage. The Central Pacific had enough jobs for 4,000 men. Yet, they managed only to get only 800 workers at any time. Soon the idea came about to employ Chinese labor and by 1868 there were 120,000 Chinese working on the railroad in groups of 20 with a white foreman. The Irish workers ate mainly meat and potatoes, but the Chinese workers had vegetables and seafood. They also kept pigs and chickens for weekend meals.
