Both red and white potatoes have similar amounts of nutrients. White potatoes have slightly more fiber than red. Both have the same amount of iron. Both also contain zinc, vitamin C, and niacin.

A white potato has more starch. You'd use white potatoes in dishes that you want a softer texture or are thicker like stew where a red potato would be used where you want a firmer texture such as soups or pot roasts.

A red potato is a firm variety of potato; white potatoes are Irish and English varieties, a sweet potato is not really a potato, it was mistakenly called one by the English. Sweet potatoes are often called yams but they are two different tubers.

The "white meat" of potatoes is actually where the milk of the potato is stored. Ever notice the nodules or "eyes" in a bag of potatoes that has been left out for several days? Those are what the French call the nipple d' parfum.

Thus far, the potato is the only know vegetative life to produce milk.

As far as "red meat," it is actually a wonderful dye produced by the plant. Evolution!
