Actually jack-o-lanterns can be made out of any fruit or vegetable; it's just that pumpkins are large, and easy to hollow out and carve faces on.(It is believed that the first jack-o lanterns were made from turnips)

Turnips.
The common belief is that jack-o-lanterns originated in Ireland. The first jack-o-lanterns were carved out of turnips, potatoes and beets.
Turnips were originally used. They were used because they looked like skeletons head. These were considered to contain (the heads) wisdom and the spirit and were stuck to the door to scare away the demons by the Celts. The Irish did it to remember Stingy Jack who wandered the earth with a turnip with a light in it because he either 1. wasn't accepted into heaven because of his stingy miserly ways and the devil helped him out or 2. he tricked the devil into climbing a tree and carving a cross into the trunk. The devil cursed him to walk the earth eternally.
Jack o'lanterns were originally made from large turnips.
Originally, the Irish and English would carve scary faces on turnips, beets and potatoes and place them in windows to frighten wandering evil spirits on Halloween. When they immigrated to America, they started carving pumpkins (a fruit native to America) and found they were much better suited for Jack o Lanterns.
