Our entire concept of Chivalry has been corrupted over the years by victorian romanticists and that knights could get away with many crimes and go unpunished.
However there is a ceremony to stripping a knight of his rank; first the said disgraced knight is brought before a priest and his lord if he is a landed knight or the knight/priest who elevated him if he is a free knight, he is then stripped of his arms (this means armour more then weapons) and his spurs then his sword is taken away from him broken in two and laid out before him.

One important element of the Code of Chivalry was mercy. Killing an unarmed knight would not have been consistent with the code as it would be merciless. If you didn't follow the code of chivalry, you might have your lady love slam the door in your face. The code of chivalry was not a legal code. It was about virtue, honor, and courtly love. It was not produced by governments or the Church, but by troubadours and minstrels. Its greatest advocates were people like Eleanor of Aquitaine, who was notorious for running "courts of love," which might or might not have existed in reality, but certainly existed in poetry. The power of the code of chivalry lay in its popularity and appeal to the ideals it represented. There is a link below.

When Sir Gawain hides the green girdle given to him by Lady Bertilak instead of returning it as part of the exchange of winnings, this represents a deviation from the ideals of chivalry. Gawain prioritizes his own survival over his integrity and honor by breaking his agreement with the Green Knight.
