I would suspect the cooling fan is not working properly. One of more of the cooling fans should run continuously when the A/C is on. If not the engine will overheat.

If a computer's power supply overheats then switch the computer off and let it cool down. Similarly, purchase a laptop stand or computer fan to get cool air flowing around the machine.

Make sure that your fans are operating when the a/c is on especially the fan for the a/c.
Then it is partially clogged, your fuel/air mixture is too rich, or you have a cylinder miss. Get this repaired ASAP.
Try these and if you find a symptom repost questoin : 1. Check coolant level 2. Ensure fan shroud is intact 3. Remove thermostat (then see if it overheats) 4. Ensure fan(s) are turning on and/or fan clutches are in proper working condition

Try taking the thermostat out completely, then see if it still overheats. If so, your only other problem has to be a bubble in the system and it needs to be burped. Took me about an hour to get a stubborn air bubble out!
