The bags are packed and sealed in an air-tight bag on the ground. As the airplane climbs higher in altitude, the air pressure drops or gets lower. Above 12,000 feet, a passenger airplane has an air conditioning system that pressurizes the airplane to keep the passengers comfortable. This pressure is equal to about the same pressure if you were at 7,000 to 8,000 feet. Since the air pressure drops, the pressure inside the Bag is now more than it is outside the bag. Why? The volume of air in the bag can't change. So as the air pressure drops outside the bag, the air inside the bag expands. The opposite would happen if you took the bag under water to the bottom of your pool. It would get smaller. Also, try this. (Of course, airlines don't serve salad anymore) When you are in an airplane at cruise altitude, take a plastic container of Ranch salad dressing or equivalent. Shake it around to coat the entire inside of the container. Then slowly pull the tab. When it "opens" the Ranch dressing will pop out. The air rushes out of the container and the thick dressing that coats the inside is shot out too.
