(white cheesy stuff) its actually quite simple, heat some butter in a pan. wait for the water to evaporate (bubbles go away) then add some flower, little by little, keep stirring, and keep it at low heat. the flower MUST not bake. but simply brown a bit. i simply use white wheat flower. but i think you can use any grain. dont use maizena or riceflowers. keep adding flower until you get a thick mixture. (like pancake batter) add some milk. about 1:1. stir a bit, and add the grate cheese. keep at low heat til the sauce thickens, and the cheese has melted. at no time during the process is the pan supposed to get too hot, using an au bain marie is best.
