because they thought the moon dust was toixic and would die from exposure to it that's why in early manned space missions they had them go through a long decaotamination process after going to the moon.

Space probes are usually unmanned because they often go distances that take very long times to arrive (and would take about the same or greater time to return). And because, unmanned probes are much cheaper to make so more can be done with the same amount of money.

Early space flights were unmanned because they did not know what to expect in Outerspace. With each successive trip more and more data was collected, craft designs were improved, until it was believed safe enough to send men up. Even then it was fraught with danger. For example the First Space Walk by Alexey Arkhipovich Leonov on 18 March 1965, nearly ended in disaster as his suit expanded in the vacuum and he was unable to reenter the Capsule. Thankfully he was able to release air slowly from his suit so that he could finally fit back in.

You don't risk a human life on an as-yet untested technology. First, there were test flights of the rocket/capsule combination to be sure it worked. Then several flights with chimpanzees as the cargo (the Russians used dogs). Finally, manned flight.
