If they are your own songs that you have created yourself then it is legal (and YouTube encourage you to do so) to put your work where ever you want.

Unless the songs from iTunes are you own work or you own the copyrights you will not be allowed to put them on YouTube. The advice from YouTube says: Posting copyright-infringing content can lead to the termination of your account, and possibly monetary damages if a copyright owner decides to take legal action (this is serious-you can get sued!).
You can get songs from CDs or from the internet (youtube etc.). For youtube, remember to convert it into audio with conversion websites. Then simply put it into iTunes and sync your ipod. iTunes has it's own music store too.
I really don't think so. As long as you claim in the sidebar or create a title in the begining [and end], that you don't own anything and then say the name of the band and the date they had the concert. You should be okay.
