It depends on where you live and the average local climate. Also what you mean as a "prolonged period of time".
If you do choose to turn off utilities be sure to shut off water heater , drain all water pipes including the water heater and toilets. The intent is to leave no water that might freeze/mold.
Shut off all power at main electrical panel. Make sure nothing is left plugged in.
If there is a refrigerator or freezer, empty and clean it, leaving the door/lid open to avoid mold.
Shut off all gas/water lines coming into the house.
Arrange for someone to check the house on a regular basis to avoid possible problems or vandalism.
Let your insurance company know your house will be unoccupied.
