This is what my mum and nan and aunty (well everyone in the family do).
Go to bed at 10:30 (or earlier but no later) and set your alarm for 3:15 and when you wake up cook the meat. It is completley your choice if you want to go to sleep when it cooks or stay up and watch it to be safe. If your tired then just close your eyes for 10-20 mins on the couch or something. You should just have to heat it in the morning :)

Yes you can cook beef the night before and reheat it the next day. Keep the heat low and reheat the beef in liquid to help prevent it from drying out. You should keep the beef moist.

There is no reason why you couldn't peel vegetables the night before they are to be used. Just make sure you cover them and don't leave them exposed over night.
People decorate houses and trees, give gifts to one another, eat sweets, sing Christmas songs, cook and eat a large meal with their families, etc. Some go to special Christmas church services, often on Christmas eve night.
