The intake valves are in the intake ports, the exhaust valves are in the exhaust ports.
The purpose of the exhaust manifold is to connect the exhaust ports on the cylinder head to the exhaust pipe.
It's a big chunk of cast metal that bolts to the exhaust ports of an engine and joins up with the exhaust pipe. In a 4-cylinder engine, usually all 4 ports connect to just one exhaust pipe. In a six, usually the exhaust ports are combined 3+3 and then each bank of 3 either has its own exhaust pipe, or they are combined again somewhere underneath the car into just one pipe.

Porting is something done to the intake, and exhaust ports in the cylinder head. It enlarges the ports allowing more air/fuel mixture to flow into the combustion chamber, making more power. An engine is like an air pump. The more you flow through it, the more power you get out of it. Polishing is where they polish the enlarged ports, to a smooth finish. There are two types of thinking, as to if this is of benefit, or not. Some believe that a rough finish creates a turbulance that keeps the mixture, well, mixed.
The longer ones are the exhaust, they should go into the hole further away from the ports, the shorter ones are the intake, they go closer to the ports.
The propeller or prop should be avoided. Jet skis you need to stay clear of the water exhaust ports.
The Pontiac V8 head casting numbers are usually found on the exhaust side of the head. I have seen them located just below the valve cover, over the two center exhaust ports, or over the end exhaust ports. Some heads cast the numbers below the spark plug holes between the 2 center and outer exhaust ports.
