I'm going to provide tips on purchasing whole, dead fish, for the purpose of cooking/consumption.
To ensure you are buying a fresh fish, make sure the eye isn't cloudy. Make sure the scales are not loose or falling off; and that the skin is shiny; and the tail is moist and flat. If you press a dent into it, the flesh should resume its original shape.
