Roman Catholic AnswerIt is actually the "root of Jesse" and it is from the great O Antiphon sung on December 19 each year, it is a symbol of Christ and is taken from Isaiah 11:1. St. Ambrose explains that the root of Jesse is the whole family of the Jews, the stem as Mary, and the flower as Christ.
